Brilliant Discovery

Hollandaise Sauce, if left on the side all day by mistake (in a cool room), firms up beautifully to become Hollandaise Butter and can be used in conjunction with (for example) left over ham and a couple of branches of greenery in a toasted leftover English muffin to make an absolutely divine sandwich.  That's lunch sorted for an entire week (at the end of which I shall be very fat).
